Rhona’s Brownies

Ever since I made these brownies Joe refuses to eat any other brownies. He tells me that some people make brownies without nuts. Why bother making brownies without nuts!?!

Ingredients

1 stick butter
1/4 cup margarine
1&1/2 cups sugar
2 eggs
1 t. vanilla
3 ounces baking chocolate, melted
3/4 cup flour
1/2 t. salt
1 cup chopped nuts

Instructions

Preheat oven to 350
Cream butter and magarine with sugar. Add eggs and beat until light. Add vanilla and beat chocolate in. Add flour, salt and nuts. Mix well and pour into buttered 8 x 8 pan. Bake for 45 minutes. Make sure that middle springs up.

APPLE CAKE

Mom’s apple cake which never made it to dinner. As we all walked by and ‘evened it out’.

Ingredients

1 c. sugar
3 c. flour
3 tsp. baking powder
1/2 c Crisco (scant)
3 eggs
1/2 tsp. salt
2 tsp. vanilla
1/2 c. liquid (sour cream, milk, o.j.)
6-8 apples

Instructions

Cut fat into flour with knife and then mix in mixer with sugar, baking powder, salt until it is mealy. Add eggs, vanilla and sour cream.

Method 1. cover bottom of greased pan with half the dough. Slice apples over it and cover apples with cinnamon and sugar. Put remaining dough on top. Sprinkle w sugar an cinnamon. Bake 350 about 45 minutes.

Method 2. Cover bottom of pan with all the dough. Slice apples on top Cover with cinnamon and sugar and streussel topping.

Streussel Topping:
1/2 stick butter
1/2 c flour
1/2 cup sugar
Run in mixer until lumpy. Press on top of apples. Bake 350 about 45 minutes.

LABOR DAY CLAM CHOWDER

NOT SURE WHY THIS IS CALLED LABOR DAY CLAM CHOWDER. SEEMS AS THOUGH THIS WAS SERVED AT OTHER POOL DAY FESTIVITIES LIKE MEMORIAL DAY, JULY 4TH OR WHEN MY MOTHER JUST FELT LIKE IT!

Ingredients

3 Cans, crushed tomatoes
3 Cans water
1 lb Carrots
8 lb Potatoes, diced
2 Large clamato juice
3 t Thyme
3/4 lb Butter or margarine
2 T Sugar
1 1/2 lb Onions
Seasoned salt
6 Celery stalks
3 T Gravy master
1/2 c Flour
1 t Seasoned pepper
Accent

5 1/2 lb Clams

Instructions

InstructionsThe only instructions on this recipe are to saute the onions and celery in
the butter and add the flour.
I will assume from the order of the ingredients that you start with the
tomatoes, water and Clamato juice and proceed from there…..

*note from 2011 clam fest:
Best if made the day before. Simmer ingredients until vegetables are cooked and refrigerate overnight. Add clams 15 minutes before serving.
Serve with oyster crackers.
